Low-Carb Zucchini Pizza Bites

Zucchini slices topped with turkey pepperoni, lactose-free mozzarella cheese, marinara sauce, garlic salt and black pepper are delicious, super easy to make and a much healthier alternative to almost everyone’s favorite food!

Low-carb may sound like the very last thing that Cystic Fibrosis patients would need to worry about, but fun fact: Pizza dough and regular cheese may add to the caloric index, which is beneficial for CF patients, but the myriad of troubles they can cause far outweighs the perks. Dairy and wheat increase mucus production; and sugar and yeast exacerbate inflammation in the GI tract, leading to even more bloating and pain than usual.

Sounds like an excuse to eat more of these!

YOU’LL NEED:
2-3 Large zucchini (sliced about 1/4″ thick)
Turkey Pepperoni
Spaghetti sauce (your choice!)
Shredded Mozzarella cheese
Garlic salt and pepper to taste

TO MAKE:
Cut zucchinis into 1/4″ slices and spread onto lightly greased baking sheet. Top with one slice of pepperoni, 1/2 teaspoon of marinara sauce and a pinch of cheese. [We’ve never tried it, but other toppings such as small sliced mushrooms or black olives would be easy to add too!] Season to taste. Bake at 375° for 20-25 minutes, or until cheese is slightly browned. Eat! And eat. And eat some more.
